The Bikini Cocktail

Yields 10 people

For the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Drink (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

For the Syrup: Combine every ingredients inside a pan, heat until it reaches a light boil, stirring until the sugar dissolves. Next, turn off the burner and let it to cool entirely. Transfer to a clean bottle, seal keeping it chilled, where it will keep for around one month.

To make Cocktail Base: Mix all the liquid ingredients in a big jug, leave to sit for 60 minutes, then strain preferably using a fine cloth, so it's completely strained.

When ready to serve: Add 85ml from the cocktail base into a stirring glass filled with ice, and agitate gently for about 60 seconds to cool it down. Pour to a cold coupe glass or a similar vessel, decorate with a few cranberries adding the final touch by giving it a quick spritz of the essential oil over the top.
